Ingredients:
1 kilo rice {3 and Half mug cups rice}, the thicker variety the better, we need rice to be able to mash up nicely
3/4 coconut cream
About 2 and 1/2 to 3 cups hot boiled water {for melting creamed coconut}. Bear in mind, you may not use all the melted coconut liquid
1 and 1/2 cups sugar or to taste
1 sachet {7g} and 1 teaspoon of instant yeast
1/2 teaspoon cardamom powder
3 white eggs {no yolks}
Oil for frying
Method:
A} Soak rice over night
B} Wash the soaked rice and drain the water away.
C} Put the rice and all the ingredients in a blender
D} Blend till the mixture is crushed into very tiny pieces.
E} Put the mixture in a bowl and let it puff up or almost double in size.
F} Once puffed up or almost doubled in size, on medium heat, take a small non stick pan and put a little bit of ghee
G} Put a whole ladle full of mixture into the pan
H} Cover it with a lid just for few minutes, about 2 to 3 minutes. Make sure not to burn the bread.
I} Place it on the plate and cover it with a cling film; this will make the bread softer.
J} Repeat this with the remaining mixture.
K} Serve them with a nice cup of tea for breakfast or afternoon tea.
